Easy Gluten-Free S’mores Cake

This homemade gluten free s’mores cake is an ooey-gooey dessert to die for. It’s perfect for the holidays or really any time you’re craving s’mores. And you don’t even need a bonfire to enjoy it!

….Did I mention it’s gluten free!? YAY!

Prep Time Prep Time: 15 minutesCook Time Cook Time: 30 minutesTotal Time Total Time:  45 minutesYield Yield: serves 6-8

Ingredients:

  • 1 ½ C chocolate chips 
  • 1 ¼ C marshmallows
  • 1 C almond flour
  • ¾ C coconut flour
  • ¾ C brown sugar
  • ½ C butter 
  • 3 Tbsp creamer 
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ½ tsp salt

Instructions:

  1. Preheat the oven to 350°.
  2. Melt butter and mix with almond flour, coconut flour, brown sugar, creamer, vanilla extract, baking powder and salt until dough forms.
  3. Put dough into greased pan. (8 x 8 for a thinner cake, 4 x 8 for a thicker cake). Leave some dough to the side for crumbles later.
  4. Top dough with 1 ½ C chocolate chips.
  5. Top with 1 ¼ C marshmallows.
  6. Crumble leftover dough on top
  7. Bake for 30 minutes.
  8. Cool and serve!
